Lime Chicken with Mango Sauce


  • 4 chicken breasts, boneless, skinless and tenderized
  • 3 limes, sliced thinly
  • 2 tbsp of white wine
  • salt and pepper
  • 2 mangos, diced into small cubes
  • 1 1/2 red onion, diced
  • 2 tsp of parsley


  1. Heat oven to 300 degrees.
  2. In a baking dish greased lightly with olive oil, place alternating layers of lime slices and chicken breast. Add the wine, salt and pepper.
  3. Bake covered for 10-15 minutes.
  4. Mix the mango, onion and parsley in a bowl.
  5. Squeeze half a lime over the mixture and chill for 30 minutes.




Sage Roasted Chicken


  • 4 chicken breasts, boneless, skinless and tenderized
  • 12 large sage leaves
  • salt and pepper
  • 8 toothpicks
  • 1 clove of garlic
  • olive oil


  1. Heat the oven to 300 degrees
  2. Rub the chicken breast with olive oil.
  3. Cut the garlic clove in half and rub it on the chicken breast.
  4. Season with salt and pepper.
  5. Lay the sage leaves on the chicken breasts and then proceed to roll them into wraps.
  6. Inset two toothpicks into each chicken wrap.
  7. Place in the oven for 15-20 minutes.
