Jamaican Fish Balls

Ingredients:

  • 2 cups of potatoes, peeled and shredded
  • salt and pepper
  • 2 tbsp of butter
  • 2 eggs
  • ½ pound of cod, salted, soaked overnight, boiled and flaked
  • ½ cup of bread crumbs
  • vegetable oil

Directions:

  1. Heat 1 inch of vegetable oil in a deep pan.
  2. Combine the remaining ingredients together.
  3. Roll the mix into small balls.
  4. Fry them in the oil until browned.

 

 

 

Red Stripe Beer Fish

Ingredients:

  • 1 ½ lbs of snapper or cod, cleaned and boned
  • 1 bottle of red stripe beer
  • 1 tbsp of powdered onion
  • 1 1/2 cups of flour
  • 1 eggs, beaten
  • lemon
  • vegetable oil

Directions:

  1. Set the fish and oil aside.
  2. Combine the flour, onion powder, flour egg, salt, pepper and beer.
  3. Roll the fish in the batter and fry it in vegetable oil until the fish is browned and cooked.
  4. Squeeze lemon over top the fish before serving.
Serves: 4 persons

 

 

 

Jamaican Cod

Ingredients:

  • ¾ lbs of cod, cleaned and prepared
  • 1 onion, chopped
  • 1 sweet potato, sliced paper thin
  • 1 tomato, sliced thin
  • thyme sprigs
  • 1 hot chili
  • 3 tbsp of butter
  • salt and pepper

Directions:

  1. Place the cod in a baking pan and add ¼ cup of water.
  2. Layer the sweet potato and remaining ingredients atop the cod and cover with a piece of foil.
  3. Bake the cod at 450-degree for 15 minutes.
  4. Reduce the heat to 350 and bake for another 20 minutes.
  5. Serve with rice.
Serves: 4 persons
