Jamaican Squash Fritters

Ingredients:

  • 2 cups of squash, grated
  • 3 tbsp of brown sugar
  • 1/3 cup of milk
  • 6 tbsp of flour
  • 1 pinch of nutmeg
  • 1 tsp of lime juice
  • ¼ cup of crushed pineapple
  • vegetable oil
  • salt and pepper
  • 1 egg

Directions:

  1. Pour 1 inch of vegetable oil in the bottom of a pan and add heat.
  2. Mash the remaining ingredients together, adding salt and pepper to taste, and smack the mixture into small patties.
  3. Fry the patties in the vegetable oil until they’re browned and cooked.

Serves: 10-11 persons

  • 5 tbsp of flour
  • 1 tsp of cinnamon
  • 1 pinch of nutmeg
  • 1 tsp of lemon juice
  • ¼ cup of crushed pineapple
  • vegetable oil
  • salt and pepper
  • 1 egg

Directions:

Traditional Jamaican Johnny Cakes

Ingredients:

  • 4 ¼ cups of flour
  • vegetable oil
  • 2 tsp of baking powder
  • ½ cup of butter
  • ½ cup of water
  • 2 tsp of salt
  • 1 tsp of sugar
  • 2 tsp of nutmeg

Directions:

  1. Add the vegetable oil to a pan on the stove over a medium high heat.
  2. Combine the remaining ingredients.
  3. Mix them together well.
  4. Form them into small patty cakes and fry them in the oil until lightly brown.
