Jamaican Lentil Soup

Ingredients:

  • (1) 1 lb bag of red lentils, soaked overnight
  • 1 onion, chopped
  • 3 tbsp of coriander
  • 1 tsp of cumin
  • 2 sweet potatoes, peeled and chopped
  • 1 cup of coconut milk
  • 1 can of pumpkin
  • 1 tbsp of red curry paste
  • 7 cups of vegetable stock
  • 3 garlic cloves, minced
  • 2 pieces of ginger, minced

Directions:

  1. Add all the ingredients to a crock pot and simmer them on low for 5 hours.

Serves: 7-9 persons

 

 

 

Jamaican Bisque

Ingredients:

  • I onion, chopped
  • 5 cups of chicken broth
  • 2 garlic cloves
  • 1 cup of parsley
  • 1 stick of butter
  • 1 yam, peeled and chopped
  • 1 tbsp of thyme
  • 1 cup of kidney beans
  • 1/2 cup of chives

Directions:

  1. Bring all the ingredients to a boil.
  2. Reduce the heat and simmer for 1 hour on low.
  3. Run the ingredients through a food mill.
  4. Return the bisque to a the pot.
  5. Keep warm until ready to serve. Add additional butter for a richer bisque.
Serves: 6 persons

 

 

 

Jamaican Salsa

Ingredients:

  • 2 kiwi, peeled and chopped
  • 2 mangos, peeled, pitted and chopped
  • 3 papayas, peeled, pitted and chopped
  • 2 tbsp of hot pepper flakes
  • 2 pineapples, peeled, cored and chopped
  • 2 oranges, peeled and chopped
  • 5 tbsp of lime juice
  • 4 tbsp of brown sugar
  • ½ cup of vinegar
  • 1 cup of cilantro, chopped
  • 1 cup of pecans
  • 1 cup of walnuts
  • 1 cup of black beans, cooked

Directions:

  1. Combine all the ingredients in a large bowl.
  2. Toss them well and serve chilled or immediately

Serves: 8 persons
