Jamaican Meatloaf

Ingredients:

  • 2 1/2 lbs of ground beef
  • 1 egg
  • 1 cup of coconut milk
  • 1 onion, chopped
  • 1 tsp of sugar
  • 3 garlic cloves, minced
  • 1 tsp of pepper
  • 4 scallions, chopped
  • 1 tsp of paprika
  • salt and pepper
  • 1 chili, chopped
  • ½ cup of oatmeal
  • 1 tsp of nutmeg
  • 1 tbsp of honey
  • ½ cup of pineapple

Directions:

  1. Mash together all the ingredients and pour them into a baking dish or bread pan.
  2. Bake at 350 degrees for 1 hour.
Serves: 5-7 persons

 

 

 

Jamaican Meat Patties

Ingredients:

  • 1 cup of red onion, chopped
  • 1 tbsp of lime juice
  • 2 lbs of ground beef
  • ½ cup of pineapple
  • 1 chili, chopped
  • 1 sweet potato, peeled and shredded
  • 1 cup of oatmeal
  • 2 tbsp of soy
  • ½ cup of corn
  • flour
  • vegetable oil

Directions:

  1. Set the flour and oil aside.
  2. Combine all the ingredients together and roll them into patties.
  3. Roll the patties in flour and fry them in olive oil.
Serves: 4-5 persons

 

 

 

Jamaican Meat Pies

Ingredients:

  • 10 small pre-made pie shells in foil tins
  • 1 onion, chopped
  • 2 lbs of ground beef
  • 1 hot chili, chopped
  • 1 tsp of thyme
  • salt and pepper
  • ¼ cup of vegetable stock
  • 2 tbsp of vegetable oil
  • 1 cup of rice, cooked
  • 2 tsp of mint, chopped
  • 3 cups of pre made mashed potatoes
  • 1 tbsp of yellow curry paste

Directions:

  1. Set the mashed potatoes and pie crusts aside.
  2. Mix together the remaining ingredients and simmer them in a skillet for 15 minutes.
  3. Pour the meat mix into each pie crust.
  4. Top them with mashed potatoes and bake them in a 350-degree oven for 20-25 minutes.
Serves: 6-10 persons
