Jamaican Raisin Rice Salad

Ingredients:

  • ½ cup of raisins
  • 1 pinch of salt
  • 2 cups of rice, cooked
  • 1 can of mandarin oranges
  • salt and pepper
  • 1 cucumber, chopped
  • 1 cup of pecans, chopped
  • 1 cup of celery, diced
  • 8 tbsp of plain yogurt
  • 3 tbsp of olive oil
  • 1 tsp of lime juice
  • 1 tsp of soy sauce

Directions:

  1. Toss all the ingredients together.
  2. Refrigerate them for 2 hours before serving the salad.
  3. Serve inside a lettuce leaf.

Serves: 5 persons

 

 

 

Tangy Potato Salad

Ingredients:

  • 6 slices of bacon, chopped and cooked (save the grease)
  • 3 ¼ lbs of potatoes, boiled and cubed
  • 1 tbsp of spicy mustard
  • 3 tbsp of lime juice
  • 1 tsp of all spice
  • salt and pepper
  • ¼ tsp of turmeric
  • 4 eggs, boiled, peeled, cooled and chopped
  • 1 ½ cups of mayonnaise
  • 1 tbsp of thyme
  • ¾ cup of celery, chopped
  • ¾ cup of onion, chopped

Directions:

  1. Toss all the ingredients together in a big glass bowl and refrigerate for 4 hours before serving.
  2. Add salt and pepper to taste.

 

 

 

Jamaican Tossed Salad

Ingredients:

  • 1 bunch of basil. Chopped
  • 5 tomatoes, chopped
  • 8 artichoke hearts, chopped
  • 2 purple onions, chopped
  • 1 tbsp of lime juice
  • 2 heads of radicchio, chopped
  • 2 heads of endive, chopped
  • 6 tbsp of olive oil
  • 4 eggs, boiled, peeled and chopped
  • 2 mangos, peeled, pitted and cubed

Directions:

  1. Toss the salad well.
  2. Add salt and pepper to taste.
  3. Serve immediately.

Serves: 6-8 persons
