Jamaican Banana Wraps

Ingredients:

  • 3 cups of green bananas, peeled and grated
  • 1 cup of flour
  • 2 ½ cups of sweet potatoes, peeled and grated
  • 1 cup of coconut
  • 2 ¼ cups of coconut milk
  • 1 ¾ cups of brown sugar
  • 1 pinch of salt
  • 1 ½ tsp of vanilla
  • 1 ¼ cup of flour
  • 1 tsp of baking powder
  • banana leaves

Directions:

  1. Mix all the ingredients well.
  2. Add a fat dollop of the batter to the center of a banana leaf.
  3. Wrap them up tightly and submerge them in boiling water for 1 hour.

 

 

 

Jamaican Grapefruit Refreshment

Ingredients:

  • 2 grapefruits, peeled, seeded and roughly chopped
  • 6 tbsp of condensed milk
  • 4 tbsp of brown sugar

Directions:

  1. Mix the grapefruit and milk together.
  2. Refrigerate for 2 hours.
  3. Before serving, sprinkle with sugar.

Serves: 2 persons

 

 

 

Jamaican Coconut Pudding

Ingredients:

  • 5 cups of coconut milk
  • ¾ cups of raisins
  • ¾ cups of coconut, shredded
  • 1 pinch of salt
  • 3 cups of cornmeal
  • 1 cup of flour
  • 2 ½ cups of brown sugar
  • 1 tsp of nutmeg
  • 1 tsp of cloves

Directions:

  1. Sift together the dry ingredients.
  2. Cream together the wet ingredients and then combine the mixtures.
  3. Pour the batter into a greased pan.
  4. Dot the top of the bread with patties of butter.
  5. Bake the corn bread at 350-degress for 1 hour.
