Mama's Kitchen Dilemmas



 

 

Thai Dumpling Soup

Ingredients:

  • 2 onions, chopped
  • 2 tbsp of lime juice
  • 10 cups of vegetable stock
  • 2 lime leaves
  • 10 shitake mushrooms
  • ¼ cup of grated ginger
  • 1 lb of cooked chicken breast, torn to pieces
  • 1 stalk of lemongrass, shredded
  • 1 cup of coriander, chopped
  • 1 tbsp of fish sauce
  • 2 tsp of soy sauce
  • 1 tbsp of oyster sauce
  • 1 package of frozen dumplings
  • 2 tbsp of sesame oil

Directions:

  1. Sautee the onion and all the herbs, garlic, lemongrass in the sesame oil for 3 minutes.
  2. Add the chicken and the remaining sauces and juices. Simmer for 6 minutes.
  3. Add the broth and mushrooms. Bring the ingredients to a boil.
  4. Add the dumplings.
  5. Reduce the heat and simmer on low for 15 minutes.

Serves: 6 persons

 

 

 

Thai Chicken Soup

Ingredients:

  • 2 onions, chopped
  • 2 tbsp of sesame oil
  • 3 carrots, shredded
  • 1 bunch of scallions, chopped
  • 2 cups of cabbage
  • 1 tbsp of rice vinegar
  • ½ box of Thai rice noodles
  • 1 cup of chopped cilantro
  • 1 ½ tbsp of red curry paste
  • 2 cups of mushrooms, chopped
  • 5 chicken breasts, boneless, skinless and cubed
  • 14 cups of chicken broth
  • salt and pepper to taste

Directions:

  1. Sautee the scallions, curry paste, cilantro, mushrooms, onions and carrots in the sesame oil for 5 minutes.
  2. Add the chicken and simmer for another 4 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat and add the remaining ingredients and simmer on low for 20-25 minutes.
  5. Add the rice noodles last.
  6. Add salt and pepper to taste.

Serves: 6 persons

 

 

 

Thai Crock Pot Chicken

Ingredients:

  • 3 lbs of boneless chicken
  • 1 onion, chopped
  • 2 yams, peeled and cubed
  • 3 tbsp of hot garlic chili sauce
  • 1 clove of garlic, chopped
  • ¼ cup of orange juice
  • 2 tbsp of peanut butter
  • ¼ cup of basil
  • salt and pepper
  • ½ can of coconut milk
  • 1 tbsp of fish sauce
  • 1 tbsp of hot pepper flakes
  • 1 cup of chicken broth
  • salt and pepper to taste

Directions:

  1. Add all the ingredients to a crockpot.
  2. Simmer them on low with the lid on for 3-5 hours.

Serves 5-6 persons
