Mama's Kitchen Dilemmas



 

 

Thai Corn Flats

Ingredients:

  • 1 can of corn
  • 2 tsp of soy sauce
  • 1 egg, beaten
  • 3 tsp of red curry paste
  • 4 scallions, chopped
  • 1 green pepper, diced
  • ¼ cup of flour
  • vegetable oil
  • salt and pepper to taste

Directions:

  1. Add to a blender the corn, curry, scallions, soy sauce and green pepper.
  2. Blend them well into a paste.
  3. Roll balls of the corn pasta into flat patties; dip them in the egg, flour, then fry them in the vegetable oil.
  4. Add salt and pepper to taste.

Serves: 4 persons

 

 

 

Thai Fish Flats

Ingredients:

  • 2 lbs of any white fish
  • 1 tbsp of red curry paste
  • 1 egg
  • 2 tsp of lime juice
  • 5 tbsp of chopped basil
  • 1 tsp of sugar
  • 1 cup of oil
  • 1 tsp of fish sauce
  • 5 scallions, chopped
  • 1 tbsp of hot garlic sauce

Directions:

  1. Heat the oil in a pan.
  2. Puree the remaining ingredients together and roll the puree into small balls.
  3. Flatten them, and fry them in the oil until brown.
Serves: 6 persons

 

 

 

Thai Oysters

Ingredients:

  • 12 to 20 oysters, shucked and washed
  • flour
  • vegetable oil
  • 5 tbsp of olive oil
  • 1 tbsp of green curry paste
  • ¼ cup of basil, chopped
  • ½ cup of coriander, chopped

Directions:

  1. Bread the oysters in flour and fry them in the vegetable oil.
  2. Take the remaining ingredients and place them in a blender.
  3. Mix them together well and pour the mixture over top the oysters before serving.
Serve: as an appetizer
