Mama's Kitchen Dilemmas



 

 

Thai Peanut Salmon

Ingredients:

  • 5 salmon filets
  • 1 can of coconut milk
  • 1 lime juice
  • olive oil
  • salt and pepper
  • 1 cup of peanut sauce
  • 5 tbsp of crush peanuts
  • 4 tbsp of basil

Directions:

  1. Rub the salmon fillets with salt and pepper, olive oil, lime juice.
  2. Sprinkle the chopped basil and crush peanuts atop them before placing the salmon in a 450-degree oven for 15-20 minutes.
  3. Serve with the peanut sauce.

Serves: 5 persons

 

 

 

Salmon Pad Thai

Ingredients:

  • 1 ½ lbs of salmon fillet
  • 1 pack of pad Thai sauce
  • 1 lime, squeezed
  • 2 tbsp of olive oil
  • 1 onion, chopped

Directions:

  1. Wisk together and sauté all the ingredients, save for the salmon, for 6 minutes.
  2. Pour the pad Thai mix over top the salmon and place the salmon in a 450-degree oven for 15-20 minutes.

Serves: 4 persons

 

 

 

Thai Coriander Fish

Ingredients:

  • 4 sea bass fillets
  • sea salt
  • ½ cup of coriander, chopped
  • 8 tbsp of vegetable stock
  • 2 limes, sliced thinly
  • 4 tsp of fish sauce

Directions:

  1. Make 4 small foil packets.
  2. Spoon 2 tbsp of vegetable stock into the bottom of each.
  3. Sprinkle some of the coriander and lime slices into the bottom.
  4. Add the fillets.
  5. Sprinkle the remaining ingredients atop the fish and close the packets.
  6. Bake the fish in a 450-degree oven for 17-20 minutes.
  7. Serve with rice.
