Mama's Kitchen Dilemmas



 

 

Sweet Thai Tilapia

Ingredients:

  • 5 Tilapia fillets
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 can of coconut milk
  • 1 red bell pepper, chopped
  • 1 ½ tbsp of fish sauce
  • 1 tbsp of red curry paste
  • 1 tbsp of lime juice
  • ½ cup of coriander
  • salt and pepper

Directions:

  1. Simmer the onion and curry paste in a pan with the olive oil.
  2. Add the lime juice, coriander, fish sauce, and bell pepper.
  3. Simmer for 5 minutes.
  4. Add the fish, salt and pepper and simmer for 3 minutes.
  5. Add the coconut milk.
  6. Reduce the heat and simmer for another 5 minutes.
  7. Serve with rice.

Serves: 5 persons

 

 

 

Zesty Thai Shrimp

Ingredients:

  • 1 ½ lb of jumbo shrimp, cooked and peeled
  • ¼ cup of white wine
  • 1 cup of diced tomatoes
  • ¼ cup of sugar
  • 1 tbsp of fish sauce
  • 1 tbsp of lime juice
  • 2 carrots, diced
  • 1 green pepper, diced
  • 1 tbsp of olive oil
  • 3 tsp of soy sauce
  • 1 clove of garlic, minced
  • 1 can of pineapple chunks
  • 1 jalapeño pepper, chopped

Directions:

  1. Sautee all the ingredients, except for the shrimp, in a large pan or wok for 5-8 minutes.
  2. Toss in the shrimp and stir fry for 5 minutes.
  3. Serve over top rice.

Serves: 4-5 persons

 

 

 

Sweet Thai Scallops

Ingredients:

  • 2 lbs of (bay) scallops
  • 2 tbsp of red curry paste
  • 1 can of coconut milk
  • 1 tbsp of fish sauce
  • ¼ cup of lime juice
  • ¼ cup of (white) vinegar
  • 1 tbsp of olive oil
  • 1 clove of garlic, minced

Directions:

  1. Simmer the vinegar, curry paste and garlic in the olive oil for 5 minutes.
  2. Add the scallops and sear them. At the same time, add the lime juice and fish sauce.
  3. Simmer 1 minute.
  4. Add the coconut milk and simmer for another 4 minutes.

Serves: 3-4 persons
