Turkey and Chive-cheese Pitas

Ingredients:

  • 4 pitas, warmed in the oven
  • 4 turkey breasts, boiled or grilled and chopped
  • 1 red onions, chopped
  • 12 cherry tomatoes, quartered
  • 2 cups of lettuce, chopped and washed
  • 1 package of light Philadelphia cream cheese
  • 1 tbsp of oregano
  • 1 chive, chopped
  • salt and pepper
  • 4 tbsp of olive oil

Directions:

  1. Whip the cream cheese with the chives, oregano and 1 tsp of both salt and pepper.
  2. Spread the whipped cream inside the pitas.
  3. Add the turkey breast, lettuce, tomatoes and red onion.
  4. Drizzle one tbsp of olive oil into each pita.
  5. Add salt and pepper to taste.

Serves: 4 persons

 

 

 

Turkey Wraps with Vegetable Sauce

Ingredients:

  • 2 small zucchini
  • 2 small carrots
  • 2 small potatoes
  • 2 pieces of turkey breast, boneless, skinless and diced
  • 2 soft shell tortillas
  • 4 tsp of light mayonnaise
  • 2 tsp of yogurt
  • 1/2 lemon
  • 1 tbsp of fresh chopped parsley
  • 1 tsp of olive oil
  • salt and pepper
  • water

Directions:

  1. Boil water.
  2. Add the carrots and boil for 7 minutes.
  3. Remove them from the water.
  4. Add the potatoes and boil them for 5 minutes.
  5. Remove them from the water.
  6. Add the zucchini and boil for 3 minutes.
  7. Remove them from the water.
  8. Add the turkey to the boiling water.
  9. Boil for 3-5 minutes.
  10. While boiling, place a strainer over the top of the pot and place the tortillas in the strainer to be warmed by the steam.
  11. Combine in a bowl the vegetables and turkey.
  12. Add the mayonnaise, yogurt, parsley, oil and salt and pepper to taste.
  13. Squeeze the lemon into the ingredients and mix them well.
  14. Scoop equal portions of the vegetable and turkey salad into the tortillas.
  15. Roll them into wraps and cut them into halves.

Chili Turkey

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons cilantro
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 1 clove garlic, chopped
  • 1/2 teaspoon pepper
  • 1/8 teaspoon cayenne
  • 4-5 boneless turkey breasts
  • 1/4 cup green pepper, julienned
  • 2 tablespoons red onion, diced
  • 1/4 cup Roma tomato, diced, about 1/2 small
  • 4 ounces Colby-jack cheese, shredded

Directions:

  1. Preheat oven to 400 degrees F.
  2. Stir together olive oil, cilantro, chili powder, cumin, salt, garlic, pepper, and cayenne in a medium bowl. It will be a thick paste.
  3. Add turkey and rub olive oil mixture all over meat until coated evenly.
  4. Place turkey on a foil-lined baking sheet.
  5. Arrange vegetables over turkey.
  6. Bake at 400º for 20 minutes or until turkey is just done.
  7. Do not overcook.
  8. Top with cheese and return to oven until melted, about 5 minutes.
